
Lime & Sour Cream Cake
I used to make a cake similar to this from a Tupperware Product recipe card. I have long lost that card but have tried to replicate this cake as best as possible. I recently baked this cake for my Work Mum’s leaving morning tea, and for Father’s Day - might not taste exactly the same but it’s pretty yummo! I use limes because I love them, but you could use a lemon too.
Makes 1 x 25cm cake or 4 x 10cm cakes
Preparation Time: 5 minutes / Baking Time: 60-75 minutes
INGREDIENTS
3 eggs
160g butter
1/2 cup sour cream
1 cup caster sugar
Zest from one lime
Juice from one lime
1 & 1/2 cups self raising flour
1/4 tsp salt
METHOD
Preheat oven to 180 deg C fan bake.
Add all ingredients (in listed order) into mixing bowl.
Beat on medium speed until combined and smooth (30 to 60 seconds depending on mixer).
Pour into lined 25cm round baking tin.
Bake for 60-75 minutes until skewer comes out clean.
Leave in bench in tin for 10 minutes to cool.
Turn out onto baking rack to cool completely.
These also make nice cupcakes - just bake for 20-30 minutes until skewer comes out clean. ENJOY!
